Sinopsis

La cebolla Ocañera es un producto que goza de reconocimiento regional y nacional que, de una manera, ha logrado una identificación específica, por parte del consumidor. Esta reputación especial ha sido derivada esencialmente de su origen geográfico, así como por sus características de sabor, olor y color concentrados que no se identifican en ninguna otra variedad de cebolla. Este producto hortofrutícola está dirigido para el consumo en fresco y en vinagre, principalmente, existiendo otras variedades de cebolla que han aprovechado esta identidad de cebollitas ocañeras para lograr un nicho en el mercado nacional.

En la actualidad, la competitividad de los mercados obliga a diferenciar los productos, por lo que el interés del presente libro, es demostrar que la cebolla Ocañera, es un producto que tiene una vinculación directa con su origen, considerando los resultados prácticos, verificables y documentados a lo largo de cinco años de lecciones de investigación obtenidas. Para ello se ha realizado búsqueda y análisis de documentos y estudios de casos en este ámbito, así como los diferentes mecanismos que existen para proteger y fomentar nuevos productos con indicaciones geográficas, cuya finalidad es justamente distinguir el origen de un producto y su vínculo con características determinadas y, cuya reputación se atribuya a su origen, siendo ejemplos a seguir productos como el champagne (Francia), tequila y mezcal (México), café de Colombia (Colombia), que para el caso de la cebolla Ocañera, no está legalmente registrada, pero es utilizada simbólicamente con fines comerciales.
